How would one go about increasing the font size of the on screen volume display? Additionally, how would one go about centering it? Bonus points if you can share how to alter all on screen font sizes, like the date and time.

It is generally central unless you changed it. Which Skin are you using?
You would have to edit the skin files themselves. This is all dependent on Kodi. You’ll prob find more relevant info here
