All videos i play with embedded subtitle in the mkv files are alway showing them (OSM RC on RP2).
How can i disable subtitles for good?

Subtitles are always on by default in a fresh install of Kodi.
To disable them for all videos by default start playing a video, open the on screen controls by pressing Enter/OK, go into the audio settings, disable subtitles and then choose “set as default for all videos”.
You can still enable subtitles for specific videos afterwards.

I’m surprised there’s not a means to set just a particular setting as default (in this case, no subtitles)
Yes it saves all currently selected settings in that dialog as defaults.
This is the way it has always worked in XBMC/Kodi unfortunately, not much we can do about it. You could try submitting a feature request on the Kodi forum over at http://forum.kodi.tv/
You can use Avdshare Video Converter to removing subtitles from MKV with the help of an MKV Subtitle Remover named MKV Subtitle Remover.
