I’m kinda lost on the best way to do some retro gaming on OSMC… Dual boot or use an emulator?

No need for dual boot.
You can try the Kodi Build in Gaming Emultators but they are a bit hit and miss. If you want a more broader solution go for retrosmc / retropie
