I’ve tried looking around on the Kodi wiki/OSMC Wiki, but i wanted to know if there was a way to force a certain sort order for pictures when viewing in slideshow - e.g. by date taken. Currently they sort by filename.

This is a Kodi specific issue that you should address there. OSMC has no bearing on your problem. More relevant info should be available there.
