It’s difficult to tell what would work. Loads of devices claim ‘4K60Hz’ support but are coy about whether that’s under HDMI 1.4 (ie 420 8-bit max) or HDMI 2.0 with support for 600MHz clock. (Note that ‘HDMI 2.0’ does not necessarily imply 600MHz support.) A capture card that supports the latter is $$$$ for example.

Yeah, that’s why I bought the ugreen one, assuming the one I had was insufficient, but ended up having the same problems - both listings claim to support HDMI 2.0. Don’t want to buy a 3rd “4k60” one without any guarantee of it working, and the “4k120” ones seemed expensive and/or thin on the ground, for something I in theory don’t need
If they don’t support 600MHz then they should modify the EDID and everything would be fine, but that doesn’t seem to be happening.
