Can someone please help me figure this out? what steps do i follow to get a log or debug that I see people talking about?

For me all this sounds like network issues, so my suggestion is first to check network connectivity with iperf.
You can install iperf on OSMC with sudo apt-get install iperf3 you than would need to install on the NAS you connect to or if that is not available on your PC.

Also as you access via NFS check

Slow NFS

The Raspberry Pi 1 struggles with NFS over TCP, if you want to get the best performance on a Pi 1 I would actually use UDP. Your rsize and wsize are also rather large, I would drop them to 8192 for UDP. I would simplify your NFS line a lot, you have a lot of unnecessary stuff, try something similar to this: moorea:/export/Films /mnt/Films type nfs vers=3,rsize=8192,wsize=8192,udp,retrans=2 NFS should be performing better than SMB, not much worse.

Bad video performance on Pi 3

Is your Cisco switch a managed switch ? (EG has a web interface or configuration utility) If so check to see if flow control is enabled on the ports. If not try enabling it. Alternatively try adding smsc95xx.turbo_mode=Y to the end of the line in /boot/cmdline.txt then rebooting.
